Satay Asian Greens - cooking recipe

Ingredients
    None None Cooking oil spray
    1 None medium yellow onion, finely chopped
    2 tbsp red curry paste
    2/3 cup coconut milk
    4 oz crunchy peanut butter
    1 tsp brown sugar
    2 tsp soy sauce
    2 tsp peanut oil
    1 bunch broccolini, cut into 2 inch lengths
    1 bunch choy sum, cut into 2 inch lengths; reserve leaves
    3.5 oz snow peas, sliced diagonally
    8 cups cooked long-grain rice
    1/3 cup unsalted roasted peanuts
    1 None red chili, sliced
    .75 oz cilantro
Preparation
    Spray onion with cooking oil. Heat a large frying pan over moderate heat. Cook onion, stirring, 3-4 minutes until softened. Add curry paste and cook, stirring, for 30 seconds or until fragrant. Add coconut milk, peanut butter, brown sugar and soy sauce. Bring to boil. Reduce heat; simmer for 1 minute. Remove from heat. Keep warm.
    Heat a wok over moderately high heat. Add oil. Stir-fry broccolini for 2 minutes. Add choy sum stems; stir-try tor 1 minute. Add leaves; stir-try for 1 minute. Remove from heat. Add snow peas and toss to combine.
    Spoon rice and vegetables onto plates. Drizzle with sauce and sprinkle with peanuts, chili and cilantro.
