Potato, Bacon And Sausage Pizza With Fresh Arugula Topping - cooking recipe

Ingredients
    2 None prepared pizza crusts, about 5 oz each
    2 tsp oil
    4 None thick beef sausages
    3 strips bacon, chopped
    1/2 cup spicy tomato sauce
    2 oz reduced-fat mozzarella cheese, grated
    1 None medium potato, unpeeled, very thinly sliced
    1/2 None small red onion, thinly sliced
    1 oz baby arugula
Preparation
    Preheat oven to 450\u00b0F. Line 2 baking sheets with parchment paper and place a pizza crust on each.
    Heat half the oil in a large frying pan and fry the sausages for 10 mins or until cooked through. Drain on a paper towel and slice thinly. Add the bacon to the pan and cook, stirring, for 3-4 mins.
    Spread the sauce on the pizza crusts. Top with half the cheese and the potato, then layer on the bacon, sausage and remaining cheese. Bake for 12-15 mins or until the crusts are crisp and the cheese is golden.
    Meanwhile, combine the onion, arugula and remaining oil in a medium bowl. Remove the pizzas from the oven. Top with the arugula mixture and cut into squares to serve.
