Walnut Cake With Mascarpone Cream - cooking recipe

Ingredients
    100 g walnuts, finely chopped
    3 None eggs, separated
    1 pinch salt
    210 g caster sugar
    50 g breadcrumbs
    3 tbsp plain flour
    1/2 tsp baking powder
    100 ml rum
    250 g mascarpone cheese
    300 g cream cheese
    50 ml strong coffee
    1 tsp vanilla extract
Preparation
    Preheat oven to 325\u00b0F. Grease and flour an 8 inch square cake pan.
    Whisk together egg yolks, 1/3 cup sugar and a pinch of salt. Mix together breadcrumbs, flour, baking powder and nuts then mix in egg yolk mixture and rum. Whip egg whites to stiff peaks, gradually adding 1/3 cup sugar. Fold into nut mixture. Transfer to prepared pan and bake for 20-25 mins. Let cool in pan on a wire rack for 15 mins then remove from pan and let cool completely.
    Cut cake in 1/2 horizontally. Mix mascarpone, cream cheese, coffee, vanilla extract and remaining sugar. Spread over bottom cake layer then top with remaining cake layer. Chill for 2 hours then cut into squares and serve.
