Omelette With Goat Cheese And Walnuts - cooking recipe

Ingredients
    8 None eggs
    1/4 cup whipping cream
    1/2 cup walnuts, coarsely chopped
    3 tsp olive oil
    2 None red onions, peeled and cut into rings
    1/2 bunch spring onions, chopped
    7 oz goat cheese, cut into 8 slices
    None None salt and pepper
    None None maple syrup, to garnish
Preparation
    Whisk together the eggs and cream, salt and pepper. Roast walnuts in a dry pan, then remove.
    Heat 1 tsp oil in a 6 inch skillet and saute red onions and spring onions in batches until soft. Remove onions from pan. Heat 1/2 tsp oil in the skillet, add one quarter of the egg mixture and cook omelette on low heat for 5 mins. Transfer to a plate.
    Arrange one quarter of the onions and 2 slices of goat cheese on one half of the omelette. Fold omelette and keep warm. Make three more omelettes in the same way. Serve with walnuts and drizzled with maple syrup.
