Coleslaw With Feta Cheese And Olives - cooking recipe
Ingredients

3 tbsp mayonnaise
1 None lemon, peel grated and lemon juiced
1-2 tsp honey
5 stems mint, leaves chopped
5 stems chives, finely chopped
5 stems oregano, leaves chopped, reserving some for garnish
14 oz red cabbage, thinly sliced
1/2 None cucumber, thinly sliced
1/2 cup pitted black Kalamata olives
5 oz feta cheese, crumbled
Preparation

Mix the mayonnaise with 3 tbsp of lemon juice, the lemon peel, honey and the herbs. Season to taste.
Place the red cabbage, cucumber and olives in a large bowl. Add 1/2 of the dressing; toss to coat. Top with the feta cheese. Garnish with the reserved oregano and serve with the remaining dressing on the side.
