Super Salmon Burgers - cooking recipe

Ingredients
    10.5 oz potatoes, peeled and chopped
    1 lb salmon fillet, skin removed
    1/3 lb smoked salmon, flaked
    2 tsp capers, rinsed, drained, chopped
    1 tbsp dill, finely chopped
    1 tbsp yellow mustard
    2 tbsp all-purpose flour
    2 tbsp olive oil
    None None Bread rolls, to serve
    None None Cheese, to serve
    None None Lettuce, to serve
    None None Tartar sauce, to serve
Preparation
    Cook potatoes in boiling salted water 15-20 minutes until tender. Drain and mash well.
    Place salmon in a frying pan and cover with water. Heat on medium until just boiling. Reduce heat to low and simmer 5 minutes. Remove pan from heat. Set aside, covered, for 5 minutes or until salmon is cooked through. When cool enough to handle, flake salmon into small pieces.
    In a bowl, combine mashed potato, poached salmon, smoked salmon, capers, dill and mustard. Season to taste and mix well. Shape into 4 large or 8 small patties. Dust lightly in flour.
    In a large frying pan, heat oil on medium. Cook patties 2-3 minutes each side until golden. Drain on paper towel.
    Serve patties in rolls with cheese, lettuce and tartar sauce.
