Spicy Charred Chicken With Papaya Salsa - cooking recipe

Ingredients
    1 lb boneless skinless chicken breasts
    1/4 cup olive oil
    1 tbsp dried oregano
    1 tbsp cumin seeds
    1 tsp cayenne pepper
    2 tsp salt flakes
    None None Lemon wedges, to serve
    None None FOR THE PAPAYA SALSA
    1 small papaya, seeded, peeled and diced
    1 None avocado, seeded, peeled and diced
    1/2 None red onion, finely diced
    1/4 cup coarsely chopped parsley
    1 None lemon, juiced
    2 tsp brown sugar
    1 None long red chili pepper, seeded and finely chopped
Preparation
    Score chicken breasts on one side, at 3/4-inch intervals. Place in a shallow dish. Mix oil, oregano, cumin, cayenne pepper and salt in a small bowl. Rub all over chicken. Refrigerate at least 15 mins to marinate.
    Preheat the grill to medium. Grill chicken 5-7 mins each side, until cooked through and lightly charred. Let stand, loosely covered with foil, 5 mins.
    Meanwhile, for the papaya salsa, combine all ingredients in a bowl and season to taste.
    Slice chicken. Serve with salsa and lemon wedges.
