Spiced Salmon With Tomatoes - cooking recipe
Ingredients

2 cloves garlic
2 tsp lime juice
1 tsp black mustard seeds
1 tsp cumin seeds
1/2 tsp chili flakes
1/2 tsp black peppercorns
1/2 tsp turmeric
4 None salmon fillets
4 None tomatoes, sliced
1/4 cup olive oil
2 oz fresh cilantro leaves
None None steamed rice and lime wedges, to serve
Preparation

Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper. For the spice mixture, use a mortar and pestle to grind garlic, lime juice, mustard seeds, cumin, chili flakes, peppercorns, turmeric and a pinch of salt into a rough paste. Spread on salmon.
Arrange tomatoes on prepared baking sheet. Drizzle with half the oil and season to taste. Roast 5 mins. Sprinkle with half the cilantro leaves. Lay the salmon on top. Drizzle with remaining oil. Bake 8-10 mins, until salmon is cooked to taste. Sprinkle with remaining cilantro leaves. Serve with steamed rice and lime wedges.
