Asparagus Penne With Garlic Crumbs - cooking recipe

13 oz penne pasta
4 slices prosciutto
2 tbsp butter
1 cup fresh breadcrumbs
1 clove garlic, crushed
1 bunch asparagus, trimmed, halved
2 oz creamy blue cheese, crumbled
Preparation

Preheat oven to 350\u00b0F. Line an oven tray with parchment. Cook pasta in a large saucepan of boiling salted water, following package instructions. Drain well.
Place prosciutto in a single layer on oven tray. Bake for 3-5 mins, until crisp. Set aside. Melt half the butter in a large saute pan on high. Saute breadcrumbs and garlic for 3-4 mins, until crisp and golden. Transfer to a bowl and set aside.
Add asparagus to same pan with remaining butter and cook for 1-2 mins, until just tender. Return pasta to pan with blue cheese. Toss well. Season to taste.
Serve topped with crispy prosciutto and garlic crumbs. Garnish with parsley, if desired.
