Spicy Beef Patties With Pepper Sauce And Hand-Cut Fries - cooking recipe

Ingredients
    1 litre vegetable oil, for frying
    1 kg floury potatoes, peeled and cut into thick chips
    3 tbsp sunflower oil
    500 g mixed peppers, deseeded and diced
    3 None finely diced onions, plus 1 onion sliced into rings
    3 tbsp tomato puree
    2 1/2 tbsp plain flour
    400 ml vegetable stock
    4 None oregano stems, leaves picked and chopped
    Pinch None caster sugar
    600 g minced beef
    1 None red chilli, finely chopped
    2 tsp paprika
    2 tsp mustard
    1 None medium egg
    4 tbsp breadcrumbs
    4 tbsp milk
Preparation
    Heat 4 1/4 cups vegetable oil in a large pan to 325\u00b0F. Fry the potatoes in batches for 5-6 mins then take out and set aside. Keep the oil warm.
    For the sauce, heat 1 tbsp oil in a saucepan, add the pepper and half the diced onion and saute for 4-5 mins. Stir in the tomato puree and saute for 1-2 mins then sprinkle over 1 1/2 tbsp flour. Gradually pour in the stock then bring to a boil and simmer, stirring, for 4-5 mins. Stir in half the oregano, the sugar and season. Set aside and keep warm.
    For the patties, mix the ground beef, chili, paprika, remaining diced onion, mustard, egg, breadcrumbs and milk together and season. Mold the mixture into 4 patties. Heat 2 tbsp oil in a frying pan, add the patties and fry for 8-9 mins, turning.
    Fry the potatoes once more in the hot oil for 3-4 mins. Do this in batches and remove using a slotted spoon. Sprinkle the finished potatoes with salt and pepper.
    Dust 1 tbsp flour over the sliced onion then add to the hot oil after the chips. Fry for 1-2 mins until golden. To serve, divide the pepper sauce between 4 plates and top with a beef patty. Serve the chips on the side and add a few onion rings.
