Greek Style Macaroni Cheese - cooking recipe

Ingredients
    12 oz elbow macaroni
    2 tbsp butter
    2 tbsp flour
    3 cups milk
    4 oz baby spinach
    10 None cherry tomatoes, halved
    1/3 cup sliced pitted black olives
    4 None green onions, sliced
    1 tbsp chopped parsley
    3/4 cup grated Cheddar cheese
    2 tbsp grated Parmesan
    2/3 cup crumbled feta cheese
    1 tbsp oregano leaves
    None None Salad and crusty bread, to serve
Preparation
    Cook the pasta in large saucepan on boiling salted water according to package directions.
    Melt butter in a large saucepan on medium heat. Add flour and cook, stirring, for 1 min. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 mins. Season to taste.
    Add spinach, tomatoes, olives, onions and parsley to sauce. Cook, stirring, for 3-5 mins.
    Preheat the broiler to high. Drain pasta. Add to sauce with Cheddar and Parmesan cheeses; mix well. Divide among 4 ovenproof gratin dishes. Sprinkle with feta and oregano.
    Broil for 1-2 mins, until cheese is golden. Serve with salad and crusty bread.
