Cranberry And Orange Spiced Biscotti - cooking recipe

Ingredients
    3/4 cup sugar
    2 None eggs
    2 1/2 cups flour, sifted
    1/2 cup pistachios
    1/2 cup sweetened dried cranberries
    2 tsp finely grated orange peel
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with parchment paper.
    Beat the sugar and eggs in a large bowl with an electric mixer for 3 mins, or until the mixture increases in volume and is thick and pale. Stir in the flour with a wooden spoon until almost combined. Add the pistachios, cranberries and orange peel. Using clean hands, combine well.
    Shape the mixture into 2 logs, about 8 inches long. Place the logs on the prepared pan and flatten slightly to 3/4-inch thickness
    Bake for 15-20 mins, until firm. Cool completely on wire rack.
    Reduce oven temperature to 250\u00b0F. Cut each log into 1/4 inch-thick slices and arrange in a single layer on same lined baking pan. Bake for 15-20 mins, turning once. Remove from oven and transfer slices to wire racks to cool completely.
