Beef, Tomato And Cheese Croquets - cooking recipe

Ingredients
    1 lb ground beef
    4 slices bacon, finely chopped
    1 None small potato, grated, excess liquid drained
    1 None small onion, grated
    1 None large egg, lightly beaten
    1 tbsp Worcestershire sauce
    1 tbsp chopped fresh parsley
    2 tbsp olive oil
    4 None medium potatoes, peeled, cut into small chunks, par-boiled
    14 oz pumpkin, cut into small chunks
    1 None tomato, sliced
    1 cup mozzarella, grated
    3 sprigs fresh basil leaves
Preparation
    Preheat oven to 400\u00b0F.
    In a bowl, combine ground beef, bacon, grated potato, onion, egg, Worcestershire sauce and parsley. Season to taste. Form into 8 even-sized croquets. Chill for 20 mins.
    Brush base of a large baking dish with oil. Arrange croquets in dish. Surround with potatoes and pumpkin. Drizzle with remaining oil. Season to taste.
    Bake for 20 mins. Place a slice of tomato on each croquet and sprinkle with cheese. Bake for a further 10-15 mins. Serve scattered with basil leaves.
