Thai Beef Salad - cooking recipe
Ingredients

1 tbsp oil
2 cloves garlic, crushed
1 None red onion, thinly sliced
1 tbsp thinly sliced lemongrass
10 oz ground beef
1 small cucumber, halved lengthwise and diagonally sliced
1 bunch cilantro, stems and leaves chopped
1/2 cup chopped mint
2 slices fresh pineapple, diced
1 pkg (4 oz) cooked crunchy rice or egg noodles
None None Lime wedges, to serve
None None FOR THE DRESSING
2 tbsp fish sauce
2 tbsp lime juice
1 tbsp sugar
1/2 tsp cayenne pepper
Preparation

Heat oil in a large skillet on high heat. Cook garlic, onion and lemongrass 2 mins, until soft. Add ground beef and and cook 4 mins, stirring, until browned. Set aside to cool.
Meanwhile, for the dressing, combine all ingredients in a small bowl.
Toss ground beef mixture with cucumber, herbs, pineapple and noodles. Add half of dressing and gently toss together. Serve immediately with remaining dressing and lime wedges.
