Cherry And Chocolate Gift Cake - cooking recipe

Ingredients
    2 cups all-purpose flour
    3 tsp baking powder
    1/2 cup, plus 2 tbsp sugar
    1 medium egg
    1 cup milk
    1/3 cup oil
    1 1/2 cups jarred or canned sour cherries, drained and halved
    1 3/4 oz dark chocolate, roughly chopped
Preparation
    Preheat oven to 350\u00b0F. In a bowl, mix together the flour, baking powder and sugar. In a separate bowl, whisk together the egg, milk and oil. Add the flour mixture then stir in the cherries and chocolate. Divide mixture between 6 small, greased, oven-proof glasses with airtight seal-able lids, each with a volume of 1 1/4 cups. Bake, uncovered, on the middle rack of the oven for about 35 minutes, until a knife inserted comes out clean.
    While the cakes are baking, place the lids in boiling water for 2 minutes to sterilize, then drain on a tea towel. Remove the cakes from the oven and seal immediately with the sterilized lids. The cakes should keep, unopened, for about 4 weeks.
