Penne With Spinach, Bacon And Mushrooms - cooking recipe

14 oz penne pasta
8 strips bacon, cut into thin strips
4 None spring onions, finely chopped
12 oz button mushrooms, sliced
10 oz low-fat sour cream
4 oz baby spinach
1 oz Parmesan cheese, grated
Preparation

Cook the penne, according to package instructions. Drain, return to pan and cover to keep warm.
Meanwhile, for the sauce, cook the bacon in a medium saucepan on a medium-high heat for 3 mins, stirring, until brown and crisp. Add the spring onion and mushroom and cook 3 mins, stirring, until soft. Add the sour cream and spinach and season to taste. Cook 1-2 mins, until heated through. Add to the warm pasta and toss together over medium heat. Sprinkle with Parmesan to serve.
