Asian Glazed Chicken - cooking recipe

1 (6 lb) whole chicken
1/2 cup orange marmalade
1/4 cup rice wine vinegar
1/2 tsp crushed red pepper flakes
1/4 cup minced scallions, plus 6 extra julienned for garnish
2 None yellow bell peppers, sliced
2 None green bell peppers, sliced
Preparation

Preheat oven to 350\u00b0F. Season chicken then place on a rack inside of a roasting pan.
In a small saucepan, cook marmalade, vinegar and crushed red pepper flakes until sticky, stirring frequently. Remove from heat and mix in minced scallions. Let cool for 5 mins then brush 1/2 of glaze over chicken. Roast for 30 mins.
Toss peppers with remaining glaze and arrange around chicken. Roast for 15 mins, or until chicken is cooked through and peppers are tender. Arrange chicken and peppers on a serving platter and garnish with julienned scallions.
