Chocolate, Cherry And Hazelnut Cake - cooking recipe

500 g cherries, stoned and halved with the stalks removed
250 g cherry jam
250 g flour
100 g ground hazelnuts
2 tbsp cocoa powder
250 g butter or margarine, chopped
125 g sugar
1/2 tsp vanilla extract
3 tbsp icing sugar
1 tbsp lemon juice

To make the cake crumbs, combine the flour, hazelnuts, cocoa powder, sugar, salt and vanilla extract with the butter in a large bowl. Crumble with your fingers.
Grease a 10 inch spring-form cake pan and mix the cherries with the cherry jam. Press 2/3 of the cake crumbs firmly into the bottom of the pan. Spread the cherry mixture on top, then sprinkle with the rest of the cake crumbs. Bake in a preheated oven at 350\u00b0F for about 50 mins. Remove the cake from the oven and allow to cool.
To glaze, blend the lemon juice with the powdered sugar and drizzle over the cake. Serve with some whipped cream mixed with a little cinnamon, if desired.
