Salmon And Chickpea Fattoush Salad - cooking recipe

Ingredients
    3 None pita breads, torn
    1/4 cup olive oil
    1/4 cup lemon juice
    2 cloves garlic, crushed
    4 oz mixed salad greens
    1 can (15 oz) salmon, drained and flaked
    1 can (15 oz) chickpeas, drained and rinsed
    1 cup crumbled feta cheese
    2 None tomatoes, chopped
    1 None cucumber, chopped
    1 None red onion, thinly sliced
Preparation
    Preheat the oven to 400\u00b0F.
    Toss pita bread with 2 tbsp of the oil on a baking pan. Season to taste. Arrange in a single layer. Bake 6-8 mins, until golden and crisp. Cool.
    Whisk remaining 2 tbsp oil, lemon juice and garlic in a small bowl. Season and set aside.
    Combine salad greens, salmon, chickpeas, feta, tomato, cucumber and onion in a large salad bowl. Drizzle with 1/2 of the dressing and toss. Top with pita croutons. Drizzle with remaining dressing to serve.
