Avocado Bread With Lime Icing And Pistachios - cooking recipe

1 None avocado, peeled, stoned and diced
1 tsp lemon juice
225 g butter
200 g caster sugar
1 tsp vanilla extract
4 None eggs
350 g plain flour
50 g ground almonds
4 1/2 tsp baking powder
50 ml semi-skimmed milk
250 g icing sugar
1 None lime, grated zest and 5-6 tbsp juice
30 g pistachio nuts, roughly chopped

Preheat the oven to 325\u00b0F. Grease a 6 cup loaf pan and sprinkle with flour. In a bowl, mash the avocado and lemon juice. In a separate large bowl, beat the butter, sugar, vanilla extract, and a pinch of salt until creamy. Beat in the eggs one at a time.
In another bowl, mix the flour, almonds, and baking powder together. Stir one-third of the flour mixture into the butter mixture, followed by one-third of the avocado mixture and one-third of the milk. Repeat twice. Spoon batter into the pan and smooth out. Bake for 1 hour 10 mins, until a skewer comes out clean, covering with aluminium foil after 20 mins.
Allow to cool for 40 mins, then turn out of the pan and allow to cool completely on a wire rack.
In a bowl, mix the powdered sugar, lime zest, and lime juice until smooth. Spread over the cake and sprinkle with the pistachios. Allow to set.
