Tofu Patties With Thai Salsa - cooking recipe

Ingredients
    1 (13.5 oz) can cannellini beans, drained, rinsed
    7 oz firm tofu, drained on paper towel
    2 slices wholegrain bread, broken into pieces
    1 None red onion, roughly chopped
    2 tbsp fresh mint leaves
    1/4 cup fresh cilantro leaves
    1 tbsp teriyaki marinade
    1 None egg, lightly beaten
    1 clove garlic, minced
    2 tbsp self-rising flour
    2 tbsp vegetable oil
    None None Thai Salsa
    1 None Persian cucumber, halved, seeded, finely chopped
    2 tbsp fresh cilantro leaves, chopped
    2 tbsp lemon juice
    1 None small red chili, finely chopped
    1 tsp brown sugar
    None None salad, to serve
Preparation
    In a food processor, combine cannellini beans, tofu, bread, onion, herbs, teriyaki sauce, egg and garlic. Process until smooth. Add flour and process until combined.
    Heat oil in a medium frying pan over high heat. Place egg rings in pan then spoon tofu mixture inside. Cook over medium heat for 2-3 mins per side, or until firm and golden. Drain on paper towels. Repeat with remaining tofu mixture.
    To make Thai salsa, combine all ingredients in a small bowl and toss to combine.
    Serve patties topped with Thai salsa and salad on the side.
