Fusilli With Sausage, Mushrooms And Cherry Tomatoes - cooking recipe

Ingredients
    10.5 oz fusilli or other short pasta
    1 tbsp olive oil
    6 None cooked Italian sausages, casings removed, thickly sliced
    7 oz button mushrooms, sliced
    2 cloves garlic, minced
    8.75 oz cherry tomatoes
    1/2 cup chicken stock
    1/2 cup fresh flat-leaf parsley, chopped
    1/4 cup heavy cream
    1 oz Parmesan cheese, shaved
Preparation
    Cook pasta in boiling salted water until al dente. Drain.
    Meanwhile, heat oil in a large frying pan over medium heat. Cook sausages for 4-5 mins, until browned. Add mushrooms and garlic. Cook for 2-3 mins, until softened. Add tomatoes and stock. Season. Cook for 5 mins, until reduced slightly.
    Increase heat to high. Add pasta, parsley and cream and toss to coat. Serve topped with Parmesan.
