Roast Pork With Spiced Apple Sauce - cooking recipe

1 None boneless rolled pork loin (about 4 1/2 lbs), rind scored
1 1/2 tbsp olive oil
1 tbsp sea salt flakes

4 None Granny Gmith apples, peeled, cored and chopped
2 tbsp sugar
2` tbsp butter
2 tsp lemon juice
1 tsp mixed spice, such as pumpkin pie spice
Preparation

Preheat the oven to 425\u00b0F. Weigh pork and calculate cooking time (allow 20 mins per pound for pork loin with rind).
Place pork on a rack in a roasting pan. Drizzle with oil and rub salt onto pork.
Roast for 20 mins. Reduce oven temperature to 350\u00b0F. Roast a further 1 hour 10 mins, until cooked to desired doneness. Cover loosely with foil and let stand 15 mins.
Meanwhile, for the apple sauce, combine all ingredients and 1/2 cup water in a medium saucepan. Bring to a boil on high heat. Reduce heat to low; simmer 10 mins, until fruit is pulpy. Stir with a wooden spoon until smooth.
Slice pork and serve with apple sauce.
