Ciabatta Stuffed Peppers With Tomato And Mozzarella - cooking recipe

4 None red peppers, halved and deseeded
6 oz fresh mozzarella cheese, drained and cut into cubes
1/2 loaf ciabatta loaf, torn into pieces
6 oz cherry tomatoes
3 tbsp olive oil
None None flat-leaf parsley to garnish
Preparation

Preheat oven to 400\u00b0F. Place the red peppers, cut-side up, on a baking sheet. Roast 15 mins until just tender. Fill with mozzarella, ciabatta pieces and cherry tomatoes. Drizzle with olive oil and roast 15 more mins until browned and cheese is golden and bubbling. Garnish with parsley and serve immediately.
