Coffee Liqueur - cooking recipe

1 oz espresso ground coffee
1 cup brown sugar
1 1/2 cups dark rum
1 None vanilla pod, cut lengthways with the seeds scraped out
Preparation

Mix the espresso in a jug with 1 1/4 cup of cold water, then cover and refrigerate overnight. The following day, pass the coffee through a fine filter to remove the granules. Meanwhile, bring 1 cup of water to a boil with the sugar, then mix with the drained coffee liquid. Add the rum, vanilla pod with the seeds and leave, covered, to infuse for 3 days. Next, strain and transfer to glass bottles. This makes 3 bottles of 1 1/4 cups each.
