Marzipan And Chocolate Stracciatella Cherry Cake - cooking recipe

Ingredients
    1/2 cup (1 stick) butter, plus more for greasing pan
    7 oz marzipan, finely diced
    3/4 cup sugar
    1 pinch salt
    1 tsp vanilla extract
    4 medium eggs
    3 1/4 cup all-purpose flour, plus more for dusting pan
    5 tsp baking powder
    1 None (15-oz) can pitted sour cherries, drained and rinsed
    7 oz dark chocolate, coarsely chopped
    1/2 cup heavy cream
    1 tbsp solid coconut oil
    18-20 None sweet cherries ( with stem if possible)
Preparation
    Place the butter, marzipan, sugar, salt and vanilla extract in a bowl and beat until creamy with a hand-held mixer. Add eggs one at a time, beating each until incorporated.
    Preheat the oven to 325\u00b0F. Mix the flour and baking powder together then add to the creamed mixture and stir. Stir in 1/2 of the chocolate and then add the cherries in batches, stirring well. Scrape batter into a greased, floured 9-cup bundt pan and smooth the surface.
    Bake for approximately 50 mins. Remove from the oven, place on a cooling rack and let cool for about 40 mins. Carefully invert the cake, remove pan and allow to cool completely.
    Scald the cream and coconut oil in a small saucepan over low heat. Remove from the heat, add remaining chocolate and stir to dissolve it. Allow to cool for 15 minutes. Drizzle the topping over the cake with a tablespoon. Allow to set slightly. In the meantime wash the sweet cherries (if possible so that the stems are retained). Carefully pat dry. Place the cherries on top of the cake and allow to set.
