Queso Fundido - cooking recipe
Ingredients

4 None flour tortillas, cut into wedges
2 tbsp olive oil, plus 1 tsp
1 link cured chorizo, thinly sliced
1 None jalapeno pepper, deseeded, finely chopped
9 oz mozzarella cheese, grated
1/2 cp sour cream
None None fresh cilantro leaves, for garnish
Preparation

Preheat a griddle over high heat. Brush tortilla wedges with 2 tbsp oil and toast for 1-2 mins per side, until crispy.
Meanwhile, heat a small frying pan over high heat. Cook chorizo for 5 mins, turning, until chorizo browns and fat renders. Using a slotted spoon, set chorizo pieces aside.
Add 1 tsp oil to rendered chorizo fat. Cook jalapeno pepper for 1 min, or until fragrant. Add cheese. Reduce heat to medium and cook, stirring constantly, for 3-5 mins, until cheese melts. Add sour cream and stir to combine. Spoon into a serving bowl.
Garnish with cilantro leaves and serve with tortillas and chorizo for dipping.
