Apple Sponge Pudding - cooking recipe

2 None eggs
1/4 cup sugar
1/2 cup self-rising flour
1/2 tsp mixed spice, such as pumpkin pie spice
1 1/2 cups canned apple pie filling
None None Cream or ice cream, to serve

Preheat the oven to 350\u00b0F. Lightly grease a 5-cup baking dish.
Beat eggs in a medium bowl with an electric mixer until fluffy. Add sugar, 1 tbsp at a time, beating until thick and creamy.
Sift flour and spice over egg mixture; fold in gently. Spoon apple pie filling into prepared dish. Pour egg mixture over the top.
Bake 30-35 mins, or until sponge is cooked when tested with a skewer. Serve warm with a cream or ice cream, if desired.
