Crunchy Chicken With Sour Cream Dip - cooking recipe

Ingredients
    2/3 cup light sour cream
    5 oz corn salsa
    2 tbsp chopped fresh flat-leaf parsley
    1 lb sweet potatoes, cut into thick chips or wedges
    2 tsp Italian seasoning mix
    None None olive oil cooking spray
    1/3 cup flour
    2 None large egg whites, lightly beaten
    1 oz cornflakes, crushed
    1 1/2 lbs chicken breast strips
    None None salad, to serve
Preparation
    Preheat oven to 425\u00b0F. Line 2 baking sheets with parchment paper. For the dip, mix the sour cream, salsa and parsley together in a small bowl.
    Place sweet potatoes on one of the prepared baking sheets and sprinkle with seasoning mix. Toss to combine and spray with oil. Bake 20 mins, until golden and tender.
    Place flour, egg whites and cornflakes in 3 separate bowls. Lightly coat chicken in flour and shake off excess. Dip in egg, then cornflakes. Place chicken in a single layer on remaining baking sheet. Generously spray with oil. Bake 15 mins, or until golden brown and cooked through. Serve with sweet potato wedges, sour cream dip and salad.
