Chicken With Spicy Thai Dipping Sauce - cooking recipe

3 None fresh long red chili peppers, coarsely chopped
3 None fresh small chili peppers, coarsely chopped
1 None shallot, coarsely chopped
2 cloves garlic, crushed
1 piece (3/4-inch) ginger, coarsely chopped
1/3 cup lime juice
2 tbsp fish sauce
1 tbsp grated palm sugar or brown sugar
1/4 cup finely chopped unsalted roasted peanuts
2 tsp oil
4 None chicken thighs
Preparation

For the sauce, blend or process chili peppers,, shallot, garlic, ginger, lime juice, fish sauce and sugar until smooth. Stir in nuts.
Heat oil in a large skillet on medium heat. Cook chicken 6-7 mins per side until cooked through.
Spoon sauce over chicken to serve.
