Udon Noodles With Chicken And Bok Choy - cooking recipe

Ingredients
    2/3 cup chicken breasts, cut into strips
    2 tbsp soy sauce
    2 tbsp honey
    2 tsp peanut oil
    1 None carrot, cut into matchsticks
    2 cloves garlic, thinly sliced
    4 pieces fresh ginger, peeled, julienned
    1 None bird's eye chili pepper, finely sliced, plus extra, to serve
    1 None red pepper, deseeded, sliced
    2 stalks celery, sliced
    1 bunch baby bok choy, trimmed, leaves separated
    4 oz dried udon noodles, cooked according to package directions
    None None cilantro leaves, to serve
Preparation
    In a bowl, combine chicken, soy sauce and honey. Set aside 5 mins to marinate. Drain chicken and reserve marinade. In a large wok or frying pan, heat oil on high. Add chicken and stir-fry 2-3 mins, until just cooked through. Remove from wok and set aside.
    Add carrot, garlic, ginger, chili pepper and reserved marinade to wok and stir-fry 3-4 mins. Add 1/4 cup water, red pepper, celery and bok choy stems and cook 1-2 more mins. Return chicken to wok, along with noodles and bok choy leaves. Toss until well combined and heated through. Serve with extra chili pepper and cilantro leaves.
