Lamb Meatballs With Couscous - cooking recipe

Ingredients
    1 1/2 lb ground lamb
    1/3 cup breadcrumbs
    1 None egg, lightly beaten
    1 clove garlic, minced
    2 tsp ground cumin
    3.5 oz feta cheese, cut into 20 pieces
    2 tbsp vegetable or olive oil
    7 oz couscous
    2 None medium tomatoes, finely chopped
    1 None small red onion, finely chopped
    3 tbsp fresh mint, roughly chopped
    8 None pitas, split open
Preparation
    Combine ground lamb, breadcrumbs, egg, garlic and cumin. Shape into 20 meatballs. Press a piece of feta into each ball then re-roll to enclose. Chill for 1 hour 30 mins.
    Heat 1 tbsp oil in a large frying pan, cook meatballs, in batches, for 3-4 mins, or until browned and cooked. Set aside.
    Meanwhile, combine couscous with remaining oil. Cook according to package instructions. Fluff and separate grains with a fork. Combine with meatballs, tomatoes, onion, and mint. Season then stuff pitas. Serve.
