Tuscan Tuna Melts - cooking recipe

Ingredients
    4 slices thick multigrain bread
    3 oz roasted eggplant slices, drained, thinly sliced
    3 oz roasted red peppers, drained, thinly sliced
    2 - 7 oz cans tuna in oil, drained
    2 tbsp kalamata olives, sliced
    1/2 cup mozzarella cheese, grated
    None None arugula, to serve
Preparation
    Make 2 sandwiches on multigrain bread with eggplant, peppers, tuna, olives and cheese. Heat a large frying pan over medium heat, spray both sides of sandwich with oil then cook for 2 mins per side, or until golden and heated through. Transfer to a cutting board, cut in 1/2 and serve with arugula.
