Ingredients

1/2 cup sugar
2/3 cup espresso
2 tbsp dark rum
3/4 cup marsala
2 None large eggs, separated
2 cups mascarpone
12 oz panettone, cut into 1/4 inch thick slices
None None grated dark chocolate, blueberries and blackberries, to decorate
Preparation

Dissolve 2 tbsp of sugar in the coffee. Add rum and 2/3 cup of marsala. Chill.
Cream remaining sugar with egg yolks, add remaining marsala and thoroughly combine. Fold in mascarpone, making sure there are no lumps. Whisk egg whites until forming stiff peaks, gently fold into mascarpone mixture.
Soak panettone slices in coffee mixture. Spoon a layer of mascarpone mixture into a glass serving dish, top with a layer of panettone, then continue to layer, finishing with mascarpone.
Sprinkle with grated chocolate and berries.
