Mini Cinnamon Teacakes - cooking recipe

1/4 cup butter, chopped, at room temperature
3/4 cup sugar
1 None egg
1 tsp vanilla extract
3/4 cup self-rising flour, sifted
1/3 cup milk
None None Topping
1 tbsp butter, melted
1 tbsp sugar
1 tsp ground cinnamon
Preparation

Preheat oven to 350\u00b0F. Lightly grease a 12-hole muffin pan.
Beat the butter and sugar together until pale. Beat in egg and vanilla. Fold in the flour alternately with milk, stirring until combined. Spoon mixture evenly into pan.
Bake 12-15 minutes, until a skewer inserted in the center of a cake comes out clean. Cool in pan for 5 mins, then transfer to a wire rack.
For the topping, brush hot cakes with melted butter and sprinkle with combined sugar and cinnamon.
Serve teacakes warm or cooled.
