Quick And Easy Mini Lamingtons - cooking recipe

Ingredients
    1 lb store-bought sponge cake, cut into 1 inch cubes
    1/3 cup strawberry jam
    1/4 cup heavy cream, lightly whipped
    4 cups powdered sugar
    1/3 cup cocoa powder
    3/4 cup milk
    2 tbsp butter, melted
    2 cups shredded coconut
Preparation
    Cut each cake cube in half and spread one surface with jam and whipped cream. Sandwich together.
    Sift powdered sugar and cocoa together into a large heatproof bowl. Stir in milk and butter.
    Place icing over a saucepan of gently simmering water and heat gently, stirring, until sugar dissolves and mixture is smooth and runny.
    Using a fork, dip each cake piece into chocolate icing, draining off excess. Roll in coconut to coat. Place on a wire rack and allow to set.
