Grilled Goat Cheese Salad - cooking recipe

Ingredients
    1 small loaf French bread, thinly sliced
    2 tbsp olive oil
    1/3 cup walnuts, toasted, roughly chopped
    3 tbsp fresh flat-leaf parsley leaves, roughly chopped
    1 clove garlic, finely chopped
    2 tbsp walnut oil
    1 tbsp white wine vinegar
    10.5 oz goat cheese, cut into 4 slices
    3 oz mixed greens
Preparation
    Preheat broiler. Brush bread with olive oil and broil until toasted on both sides.
    Meanwhile, in a small bowl, combine walnuts, parsley, garlic, walnut oil and vinegar.
    Place cheese slices on a baking tray and broil for 30 seconds, or until lightly browned.
    Distribute mixed greens between serving plates. Top with cheese and walnut mixture. Serve with bread.
