Calamari And Orange Salad - cooking recipe

Ingredients
    7 oz calamari rings
    1 tbsp olive oil
    4 oz mixed baby greens
    2 None oranges, segmented
    1 small red onion, thinly sliced
    1/2 cup canned artichoke hearts, halved
    1/2 small cucumber, sliced
    1 tbsp torn mint leaves
    None None FOR THE DRESSING
    1/4 cup olive oil
    1/4 cup orange juice
    1 clove garlic, crushed
    1/4 tsp Dijon mustard
Preparation
    Preheat a grill pan or large skillet on medium-high heat. Toss calamari rings with olive oil. Cook on grill for 1-2 mins each side. Transfer to a large bowl.
    While calamari is still warm, add baby greens, orange segments, red onion, artichokes, cucumber and mint leaves; toss well.
    For the dressing, whisk all ingredients in a small bowl. Pour over salad and toss to combine. Serve.
