Peas With Mint And Spring Onions - cooking recipe

Ingredients
    1 bunch spring onions, green parts cut into 2 inch pieces, bulbs quartered
    1 tbsp butter
    22 oz frozen peas, thawed
    6 leaves lettuce, such as romaine or iceberg, shredded
    2 tbsp fresh mint leaves, shredded
Preparation
    Melt butter in a large saucepan over medium heat. Add onions, peas, lettuce and 1/3 cup water. Cook, covered, for 5 mins. Fold in mint leaves and season to taste. Serve immediately.
