Lamb, Apricot And Prune Tagine - cooking recipe
Ingredients

2 lb diced lamb
1 None large onion, finely chopped
2 cloves garlic, minced
4 tbsp olive oil
3 tbsp honey
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground turmeric
8 oz tomatoes, roughly chopped
8 oz dried prunes
8 oz dried apricots
Preparation

Combine diced lamb, onion, garlic, olive oil, honey and spices. Season. Cover and let marinate for at least 1 hour at room temperature, or overnight in the refrigerator.
Transfer lamb mixture to a large pan and add 3 cups water. Bring to a boil, cover and simmer very gently for 1 hour 30 mins, stirring occasionally. Add tomatoes, prunes and apricots. Cook, uncovered, for 15-20 mins, until thickened.
