Beer Battered Fish With Oven Baked Sweet Potato Fries - cooking recipe

Ingredients
    1 tsp active dry yeast
    1 cup flat beer, at room temperature
    1 cup flour, plus 2 tbsp
    1 tbsp oil
    None None olive oil, for frying
    1 1/2 lb fish fillets, cut into smaller pieces

    2 1/2 lb sweet potato, peeled, cut into wedges
    1/2 tbsp brown sugar
    1 None lemon, zested
    1/2 tbsp lemon juice
    2 1/2 tbsp butter
    None None lemon wedges, to serve
Preparation
    To make the batter, mix yeast in a small bowl with 1/4 cup beer and stir until dissolved. Add remaining beer. Sift flour and pinch of salt into a large bowl. Make a well in the center and mix in beer and oil. Stir until combined then set aside in a warm area to proof for 20-40 mins.
    Heat oil to 350\u00b0F. Working in batches, dip fish in batter, letting excess drip off. Carefully lower into hot oil and cook until golden brown on both sides. Remove with a large slotted spoon and drain on a wire rack set over a tray. Season.
    Meanwhile, to make the oven baked sweet potato fries, preheat oven to 400\u00b0F. Place sweet potatoes in a large saucepan, cover with cold water and salt lightly. Bring to a gentle boil then remove from heat and drain. Transfer to a large, shallow baking dish lined with parchment paper. Season. Sprinkle with brown sugar and lemon zest. Drizzle lemon juice over top and dot with butter. Bake for 25 mins, turning once, or until golden brown.
    Serve beer battered fish with sweet potato fries and lemon wedges.
