Beef Patties With Potatoes And Coleslaw - cooking recipe

Ingredients
    1/2 None red cabbage, finely shredded
    1 None carrot, finely shredded
    1/2 cup coarsely chopped parsley
    1/4 cup lemon juice
    2 tbsp mayonnaise
    1 lb potatoes, peeled, cut into chunks
    1 lb ground beef
    1 small onion, grated
    1/2 cup dried breadcrumbs
    1 tbsp dried Italian herbs
    1 clove garlic, crushed
    1 tsp Worcestershire sauce
    1 None egg, lightly beaten
    1/4 cup olive oil
Preparation
    Place potatoes in a microwave-safe bowl with a little water. Cover with plastic wrap. Microwave on high 6-7 mins, or until just tender. Rinse in cold water and drain well.
    Combine ground beef, onion, breadcrumbs, herbs, garlic, Worcestershire sauce and egg in a large bowl. Season to taste. Shape mixture into patties. Refrigerate.
    Heat half the oil in a large skillet on high heat. Cook potatoes 8-10 mins, turning, until golden and crisp. Drain on paper towels. Season to taste. Keep warm.
    Heat remaining oil in same pan on high heat. Cook beef patties 4-5 mins each side until cooked through.
    For the coleslaw, combine all ingredients in a large bowl. Season to taste. Serve beef patties with potatoes and coleslaw.
