Tropical Fruit Salad - cooking recipe

Ingredients
    3 None cardamom pods, bruised
    1 piece (1 1/2 inches) fresh ginger, quartered
    1 tsp finely grated lemon peel
    1 tbsp lemon juice
    1 tbsp lime juice
    1 None vanilla bean, split lengthwise
    1/2 None cantaloupe, peeled, seeded and coarsely chopped
    1 None papaya, peeled, seeded and coarsely chopped
    3 None kiwi fruits, peeled and thickly sliced
    1 None mango, peeled, pitted and coarsely chopped
    4 None passion fruits, pulp scooped out
Preparation
    Place cardamom, ginger, lemon peel, juices and 1 cup water in medium skillet. Scrape vanilla seeds into pan, then add vanilla bean. Bring to a boil. Reduce heat to low; simmer, uncovered, without stirring, for 20 mins. Strain syrup into medium jug; discard spices and pod. Cool for 10 mins. Refrigerate, covered, until syrup is cold.
    Just before serving, place syrup and fruit in large bowl; toss gently to combine.
