Cheese Salad Sandwich - cooking recipe

Ingredients
    7 oz low-fat cottage cheese
    1 oz coarsely grated reduced-fat Cheddar cheese
    1/3 cup shredded baby spinach
    1 None spring onion, thinly sliced
    1 None small carrot, finely grated
    1 tbsp toasted sesame seeds
    2 tsp lemon juice
    1 cup baby mixed greens
    8 slices whole wheat bread
Preparation
    Combine cottage cheese, Cheddar cheese, spinach, onion, carrot, sesame seeds and lemon juice in a medium bowl.
    Distribute baby greens between 4 slices of bread. Top with cheese mixture then remaining bread. Cut sandwiches into squares to serve.
