Ingredients

2 1/2 cups sugar
2 1/8 cups white wine
2 1/8 cups water
1 strip orange or lemon peel
1/2 None vanilla bean, split lengthways
2 1/4 lbs peaches, nectarines or apricots
Preparation

Combine the sugar, wine, water, rind and vanilla in medium pan. Place over medium heat, stirring until the sugar is dissolved. Bring syrup to a boil and cook, uncovered, for about 3 mins or until thickened slightly.
Add the fruit to the sugar syrup. Reduce heat and simmer, uncovered, for about 5 to 10 mins or until fruit is just tender. Remove the smaller or riper fruit with a slotted spoon as it's ready.
Cool fruit in syrup. Remove skins. Serve fruit with a little of the syrup. If the syrup is too sweet, add a little fresh lemon juice to taste.
