Burgers With Goat Cheese And Minty Cucumber Salad - cooking recipe

Ingredients
    1/4 None cucumber, cut into small cubes
    1 stalk mint, leaves removed and finely chopped
    2 tbsp olive oil + 1 tsp
    1/2 tsp white wine vinegar
    150 g soft goat's cheese
    1 tbsp milk
    4 None sun-dried tomatoes, halved
    1 None small onion, peeled and diced
    300 g mince (beef, or a mixture of meats)
    1 None egg yolk
    1 tbsp breadcrumbs
    1 tsp mustard
    4 None small burger buns
Preparation
    To make the salad, mix the mint, cucumber, vinegar and 1 tsp of the olive oil. Season. For the dressing, mash the cheese with the milk to make a smooth paste, and season.
    To make the burger patties, mix the meat with the onions, breadcrumbs, mustard and egg yolk, and season. Divide the mixture into four, and with your hands, press together to form flat patties. Heat the rest of the olive oil in a frying pan and cook the burgers, turning every 5-6 mins.
    Meanwhile, cut the buns in half and spread 1/2 tsp of the goat cheese dressing on each bottom half. Next add a layer of tomatoes, then the burger, and then a dollop of the dressing. Finally add the mint salsa and top with the remaining burger bun halves.
