Pancakes - cooking recipe

Ingredients
    1 pinch salt
    5 None eggs, beaten
    1 3/4 cup flour
    1 cup milk
    2-3 tbsp sparkling water
    3 tbsp butter
Preparation
    To make the batter, add the salt to the beaten eggs then stir in first the flour, then the milk. Set aside for 15 mins then stir in the sparkling water, as needed, to thin the batter.
    To cook, melt 1/8 of the butter in an 8 inch diameter nonstick frying pan and pour in 1/8 of the batter. Flip the pancake after 2 mins and cook for 2 mins on the other side. Repeat with the remaining batter, adding a little fresh butter to the pan each time.
