Thai-Style Chicken Burger - cooking recipe

Ingredients
    2 tbsp soy sauce
    1 None lime, peel finely grated and lime juiced
    1 clove garlic, crushed
    1 tsp finely grated ginger
    1 small red chili pepper, seeded and finely chopped
    4 small boneless skinless chicken breasts
    4 None burger buns, split and lightly toasted
    2 tbsp light cream cheese
    2 tbsp sweet chlli sauce
    3 oz baby salad greens
    2 None carrots, julienned
    1 None cucumber, sliced into ribbons with a vegetable peeler
    2 tbsp fresh cilantro leaves
    None None Oven-baked French fries, to serve (optional)
Preparation
    Combine soy sauce, lime peel and juice, garlic, ginger and chili pepper in a shallow dish. Flatten chicken between 2 pieces of parchment paper with a rolling pin. Place in dish; turn to coat with marinade. Cover and refrigerate for at least 30 mins.
    Heat a large nonstick skillet on medium heat. Spray with no stick cooking spray. Cook chicken for 4-5 mins each side, until golden and cooked through.
    Place a piece of chicken on bottom half of each bun. Spoon 1 tsp each cream cheese and sweet chili sauce on each. Top with salad greens, carrot, cucumber, cilantro and bun tops. Serve with fries, if desired.
