Moroccan Fish With Couscous - cooking recipe
Ingredients

1 cup couscous
1/4 cup slivered almonds, toasted
1/2 small red onion, finely chopped
1 tbsp lemon juice
1/4 cup chopped cilantro, plus extra leaves, to serve
2 tsp vegetable or olive oil
1 1/2 tbsp Moroccan seasoning
1 tsp grated lemon peel
4 None firm white fish fillets (6 oz each)
1/4 cup plain yogurt, to serve

Place couscous in a medium heatproof bowl; stir in 1 cup boiling water. Cover with plastic wrap. Let stand for 5 mins or until liquid is absorbed. Using a fork, fluff and separate grains. Stir in nuts, onion, lemon juice, cilantro and 1 tsp of the oil.
Meanwhile, combine seasoning, lemon peel and remaining 1 tsp oil in a small bowl. Rub spice mixture over fish. Heat a large nonstick skillet on medium heat. Add fish to pan; cook for 2-3 mins each side or until browned and cooked through.
Spoon couscous onto plates. Top with fish. Serve at once with yogurt and cilantro leaves.
