Steamed Cakes With Strawberry Jam - cooking recipe

Ingredients
    1 cup strawberry jam (or jam of choice)
    1/2 cup butter, softened, chopped
    1/2 cup granulated sugar
    1 tsp vanilla extract
    2 None eggs, at room temperature
    1/2 cup all-purpose flour, sifted
    1 tbsp baking powder
    None None vanilla ice cream, to serve
Preparation
    Lightly grease 6 - 11 oz ramekins. Line bases with parchment paper. Spread 2 tbsp jam over base of each ramekin.
    Cream butter, sugar and vanilla until pale. Add eggs, 1 at a time, beating well after each addition. Fold in flour and baking powder until just combined. Transfer to prepared ramekins and smooth tops.
    Place ramekins in a steamer basket. Cover with parchment paper and steamer basket lid. Place steamer basket over simmering water. Steam for 15-20 mins, until a skewer inserted in the center comes out clean.
    Run a knife around edges of ramekins and turn cakes out onto serving plates. Serve warm with vanilla ice cream.
